I've never been coached in volleyball, but should ever player be good at every position, or should there be a base level of understanding for all players and then take individuals and mold them into position players?

I think of baseball where all players (except AL pitchers) need to know how to hit, bunt, run the bases, catch, and throw. But outfielders don't really need to know how to catch a player in a run down, infielders don't have to practice judging fly balls, and catchers don't need to know how to turn a double play on a ball hit to the right side of the infield.

I'd imagine your vball players would have similar situations?

There are 10 kinds of people in this world. Those who understand binary and those who don't.
