Actually, I loved your suggestion, we tried this on Sunday and it was DAMN funny...... We stated both sides could make up one rule, the other side said they want to hit the ball up to4 times but the fourth time if the forth time was needed they could only use their heads, we chose blocking the serves. (and only for one game) It was GREAT!
